This homemade tzatziki is a quick, no-cook dip made with grated cucumber, thick Greek yogurt, fresh herbs, lemon juice, garlic, and olive oil.

Ingredients
  

  • 2 cups grated cucumber from about 1 medium cucumber
  • 1 ½ cups plain Greek yogurt
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh mint and/or dill
  • 1 tablespoon lemon juice
  • 1 medium clove garlic pressed or minced
  • ½ teaspoon fine sea salt

Method
 

  1. Grab a big handful of grated cucumber and gently squeeze it between your palms over the sink to remove excess water. Transfer it to a bowl and repeat until all the cucumber is squeezed.
  2. Add the Greek yogurt, olive oil, chopped herbs, lemon juice, garlic, and salt to the bowl.
  3. Stir everything together until well combined.
  4. Let the mixture rest for about 5 minutes so the flavors can get to know each other.
  5. Taste and adjust with more herbs, lemon juice, or salt if needed.
  6. Serve immediately or chill until ready to use.
