The Best Cheesy Garlic Rolls

hese Cheesy Garlic Rolls are my go-to comfort bake when I want something warm, cheesy, and low-pressure. The recipe is simple, forgiving, and perfect for imperfect cooks like me.
Soft homemade dough gets rolled up with garlic, butter, cheese, and herbs, then baked until golden and irresistible.
Along the way, I share the small mistakes, lazy shortcuts, and accidental wins that make this dish fun instead of stressful.
Whether you eat them fresh, reheat them later, or tweak them based on your mood, these rolls prove that good food doesn’t need to be fancy.
It just needs to make you smile and maybe burn your fingers once.

Ingredients

  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1 cup warm water not hot, around 105 to 110 degrees
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 egg
  • About 2 cups flour
  • 3 tablespoons butter melted
  • 2 garlic cloves minced
  • 1 half cup freshly grated Parmesan
  • 1 teaspoon Italian seasoning
  • 2 tablespoons fresh chopped parsley
  • Extra cheese for sprinkling on top

Method

  1. I start by stirring the yeast, sugar, and warm water in a bowl. Then I walk away and pretend I didn’t forget about it. When it looks foamy and alive, we’re good.
  2. I mix in the salt, olive oil, and egg. Then I slowly add flour until it turns into a soft, slightly sticky dough that pulls away from the bowl without clinging for dear life.
  3. I cover it with a towel and let it rise until it doubles. About an hour. I usually clean nothing during this time.
  4. Once it’s ready, I roll it out on a floured surface into a rough rectangle. Perfect shape is not required. I brush on about half the melted butter, then sprinkle the garlic, cheese, parsley, and seasoning evenly across.

  5. I roll it up into a log, seam side down, and slice it into eight pieces. Those go onto a greased baking sheet. They rise again for about 15 minutes while I finally preheat the oven to 400 degrees.

  6. Before baking, I brush the tops with the rest of the butter and add more cheese because obviously. They bake for about 20 minutes until golden and smelling like trouble.
