Method
- Preheat the oven to 400°F (200°C).
- Slice the tops off the garlic heads, keeping the skins on so the cloves stay intact.
- Place the garlic heads on a piece of aluminum foil. Drizzle with olive oil and sprinkle with coarse sea salt.
- Wrap the foil tightly around the garlic to seal it.
- Place the foil packet directly in the oven and roast for 35–40 minutes, until the cloves are soft and golden.
- Remove from the oven and allow the garlic to cool until safe to handle.
- Squeeze the roasted cloves out of their skins into a small bowl and mash into a smooth paste.
- Add the mayonnaise, lemon juice, Worcestershire sauce, and 1 tablespoon olive oil to the mashed garlic.
- Stir or whisk until fully combined and creamy.
- Taste and adjust seasoning if needed. Refrigerate until ready to serve.
