Ingredients
  

  • 3 heads garlic roasted whole
  • cup mayonnaise
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • Coarse sea salt for roasting

  • Oven
  • Small bowl
  • Fork or masher
  • Spoon or whisk

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Slice the tops off the garlic heads, keeping the skins on so the cloves stay intact.
  3. Place the garlic heads on a piece of aluminum foil. Drizzle with olive oil and sprinkle with coarse sea salt.
  4. Wrap the foil tightly around the garlic to seal it.
  5. Place the foil packet directly in the oven and roast for 35–40 minutes, until the cloves are soft and golden.
  6. Remove from the oven and allow the garlic to cool until safe to handle.
  7. Squeeze the roasted cloves out of their skins into a small bowl and mash into a smooth paste.
  8. Add the mayonnaise, lemon juice, Worcestershire sauce, and 1 tablespoon olive oil to the mashed garlic.
  9. Stir or whisk until fully combined and creamy.
  10. Taste and adjust seasoning if needed. Refrigerate until ready to serve.
