Ingredients
  

  • 1 tbsp extra-virgin olive oil
  • 1 lb ground beef
  • 1 small yellow onion diced
  • 4 cloves garlic chopped
  • 1 green bell pepper chopped
  • 1 large carrot grated
  • 1 tsp sea salt
  • 2 tsp chili powder
  • 1 tsp dried oregano
  • 2 tsp cumin
  • 1/2 tsp cinnamon
  • 2 tbsp tomato paste
  • 2 cups chicken stock
  • 1 large russet potato peeled and diced
For serving (optional)
  • Cooked rice
  • Warm tortillas
  • Fresh cilantro
  • Jalapeño slices

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat until it becomes hot and ready for cooking.
  2. Add the ground beef, onion, garlic, bell pepper, and grated carrot, then cook while breaking up the meat until it is browned and the vegetables are softened.
  3. Stir in the salt, chili powder, oregano, cumin, cinnamon, and tomato paste, mixing thoroughly so the spices coat the meat evenly.
  4. Pour in the chicken stock and add the diced potatoes, stirring well to combine all the ingredients together.
  5. Bring the mixture to a simmer, then reduce the heat and cook gently while stirring occasionally until the potatoes are tender and the sauce thickens.
  6. Remove from heat and allow the dish to rest briefly so the flavors can settle before serving.
  7. Serve warm with rice or tortillas, and garnish with fresh cilantro and jalapeño slices if desired.
