Ingredients
  

  • 4 ounces Irish whiskey
  • 2.5 ounces peach schnapps
  • 3 ounces pineapple juice
  • 1 ounce fresh lime juice
  • 6 ounces club soda approximate
Garnish
  • 2 maraschino cherries rinsed if desired
  • 2 fresh pineapple chunks

Equipment

  • Cocktail shaker
  • Measuring jigger
  • Two glasses (highball or rocks glasses)
  • Cocktail picks

Method
 

  1. Place one cherry and one pineapple chunk on each cocktail pick and set aside.
  2. Fill a cocktail shaker halfway with ice.
  3. Add Irish whiskey, peach schnapps, pineapple juice, and fresh lime juice to the shaker.
  4. Shake vigorously for about 10 seconds until the mixture is well chilled.
  5. Fill two glasses with fresh ice and strain the cocktail evenly between them.
  6. Top each glass with club soda, leaving a little room at the top for garnish.
  7. Add the prepared pineapple and cherry garnish to each glass.
  8. Sip, smile, and enjoy.
