Ingredients

  • 2 cups warm water
  • 2 1/4 tsp active dry yeast
  • 1 tsp sugar
  • 5 cups all-purpose flour
  • 1 1/2 tbsp kosher salt
  • 1/4 cup olive oil plus extra
  • Flaky sea salt
  • Fresh parsley chopped
  • Parmesan cheese grated
For garlic butter
  • 4 tbsp butter
  • 4 cloves garlic minced

Equipment

  • Mixing bowl
  • Stand mixer with dough hook (optional)
  • 9x13 baking pan
  • Plastic wrap
  • Small saucepan
  • Pastry brush
  • Wire rack

Method

  1. Combine warm water, yeast, and sugar in a bowl, then let the mixture sit until it becomes foamy, indicating the yeast is active.
  2. Mix flour and salt in a large bowl, then add the yeast mixture and knead until the dough becomes smooth, stretchy, and pulls away from the sides.
  3. Transfer the dough to an oiled bowl, cover tightly, and refrigerate for an extended resting period to develop flavor and structure.
  4. Spread olive oil in a baking pan, add the dough, and gently stretch it toward the edges, allowing it to relax before finishing the stretch.
  5. Cover the dough and let it rest at room temperature until it becomes soft, airy, and fully fills the pan.
  6. Preheat the oven thoroughly, drizzle olive oil over the dough, and press dimples across the surface before sprinkling with salt.
  7. Bake until the focaccia is deeply golden brown with crisp edges and a soft interior.
  8. Melt butter in a pan, add garlic, and cook briefly until fragrant and lightly golden, then remove from heat.
  9. Brush or pour the garlic butter over the hot focaccia, then finish with parsley and grated parmesan before slicing and serving.
