Ingredients
  

Cookies
  • 1 cup unsalted butter room temperature
  • ½ cup granulated sugar
  • 1 cup light brown sugar packed
  • 2 eggs room temperature
  • 1 teaspoon vanilla extract
  • cups cake flour
  • 2 tablespoons cornstarch
  • 1 teaspoon baking soda
  • teaspoons baking powder
  • 1 teaspoon kosher salt
Brown Sugar Filling
  • 5 tablespoons unsalted butter softened
  • ¾ cup light brown sugar packed
  • 1 teaspoon cinnamon
  • 2 tablespoons cake flour
Brown Sugar Glaze
  • 1 cup powdered sugar
  • ½ teaspoon cinnamon
  • 3 tablespoons unsalted butter melted and cooled
  • tablespoons milk

Equipment

Method
 

  1. Beat butter, granulated sugar, and brown sugar together for 2–3 minutes until light and fluffy. Add eggs and vanilla, mixing another 1–2 minutes.
  2. Whisk together flour, cornstarch, baking soda, baking powder, and salt in a separate bowl. Gradually mix into the wet ingredients until combined. Cover and chill the dough for 1 hour.
  3. Preheat oven to 350°F and line baking sheets with parchment paper.
  4. Mix filling ingredients until smooth. Scoop about 2 teaspoons of filling and roll into small balls.
  5. Scoop ¼ cup of chilled dough, split in half, create a well in one half, place filling inside, top with remaining dough, pinch seams, and roll into a ball.
  6. Place cookies 2 inches apart on baking sheets. Bake for 11–13 minutes until tops are set and edges lightly golden. Cool on pan 5 minutes, then transfer to a rack.
  7. Whisk glaze ingredients until smooth. Spoon glaze over completely cooled cookies and let set for 15 minutes.
