Ingredients
  

Dough
  • 2 1/4 cups flour
  • 1/2 tsp baking powder
  • 2 tbsp confectioners sugar sifted
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 cup butter
  • 1/4 cup sugar
  • 1 tsp vanilla
  • 1 egg
Filling
  • 1 1/4 cups strawberry jam

Method
 

  1. Whisk flour, baking powder, cinnamon, salt, and confectioners sugar in a bowl.
  2. Beat butter and sugar until light and fluffy. Add vanilla and egg, mix until combined.
  3. Gently fold in dry ingredients until just combined. Divide dough in half, shape into disks, wrap, refrigerate at least 2 hours.
  4. Preheat oven to 375°F. Roll dough between parchment to 1/8-inch thickness. Cut heart shapes: half solid, half cutouts. Chill sheets 5 minutes.
  5. Bake 8–10 minutes until edges are lightly golden. Cool 2 minutes on sheet, then transfer to rack.
  6. Warm strawberry jam over medium-low heat for 7 minutes, stirring occasionally.
  7. Spread jam on whole cookies. Top with cutout cookies, pressing gently. Dust lightly with confectioners sugar for a pretty finish. Serve immediately.

Notes

Heart-shaped, jam-filled, a little messy, and totally adorable. These cookies are Valentine’s Day in edible form. If jam leaks or cookies crack a bit, that’s okay.
