Ingredients

  • cups cornmeal
  • ¾ cup all-purpose flour
  • ¼ cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1⅓ cups buttermilk
  • 2 large eggs lightly beaten
  • 8 tablespoons unsalted butter melted

Equipment

  • Cast iron skillet (10½- to 12-inch)
  • Large mixing bowl
  • Medium mixing bowl
  • Whisk
  • Oven mitts

Method

  1. Preheat the oven to a high temperature and place a cast iron skillet inside so it heats while the batter is prepared.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt until evenly combined.
  3. In a separate bowl, whisk the buttermilk, eggs, and melted butter, reserving a small amount of butter for greasing the skillet.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, stopping as soon as no dry streaks remain.
  5. Carefully remove the hot skillet from the oven and reduce the oven temperature. Coat the skillet with the reserved butter, ensuring the bottom and sides are well covered.
  6. Pour the batter into the hot skillet and return it to the oven. Bake until the top is firm and golden and a toothpick inserted in the center comes out clean.
  7. Allow the cornbread to cool slightly before slicing and serving so the texture sets properly.
