  • 4 tablespoons fresh basil about one large handful
  • 1 tablespoon minced garlic 2–3 large cloves
  • 2 egg yolks
  • 1 tablespoon lemon juice
  • ½ teaspoon kosher salt
  • ¼ cup extra virgin olive oil
  • ½ cup vegetable oil

Method
 

  1. Add the basil, minced garlic, egg yolks, lemon juice, and salt to a food processor.
  2. Pulse a few times until the ingredients are well combined and finely chopped.
  3. Turn the processor on and slowly drizzle in the olive oil and vegetable oil mixture. Pouring slowly is important for creating a smooth emulsion.
  4. Continue processing for about 1 minute until the aioli thickens and becomes creamy.
  5. Stop the processor, scrape down the sides, and blend again briefly to ensure everything is fully incorporated.
  6. Taste and adjust salt if needed.
  7. Serve immediately or transfer to an airtight container and refrigerate until ready to use.
