Ingredients
  

  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 cup low-sodium soy sauce
  • 1/2 cup white sugar
  • 1/4 cup mirin
  • 4 teaspoons fresh grated ginger
  • 3 cloves garlic minced
  • 1/4 teaspoon red pepper flakes
  • 4 skinless boneless chicken breasts

Method
 

  1. Preheat the oven to 400°F.
  2. In a small bowl, whisk the cornstarch and water together until smooth. Set aside.
  3. In a saucepan over medium heat, combine soy sauce, sugar, mirin, ginger, garlic, and red pepper flakes. Bring it to a gentle simmer.
  4. Slowly whisk in the cornstarch mixture. Let the sauce come to a boil, then reduce heat and simmer, stirring often, until thick and glossy, about 10 minutes.
  5. Pat the chicken dry and place it in a baking dish. Pour the thickened sauce over the chicken, turning to coat all sides.
  6. Bake for 25 to 30 minutes, until the chicken is cooked through and reaches 165°F inside. Spoon sauce over the top once or twice while it bakes.
